Turkey Sausage Breakfast Patties
Updated 2/11/12 to add the BIG Spice Mixture.
Recipe
Mix all the above ingredients in a large bowl.
- 3 tablespoons butter
- 2 lbs ground red turkey meat
- 1/2 cup of cranberries (optional)
Put 1 tablespoon of butter into 3 frying pans with lids. Warm the butter and make sure the bottom of the pans are coated with butter.
Add the turkey (and optional cranberries) to the spice mixture and mix well. Make into patties about 2 1/2 inch in diameter and place into frying pans. Cook on low heat for 10 minutes with the lids on. Remove the lids, flip the patties, and cook for another 10 minutes. Watch that they don’t burn.
Makes about 20 patties
BIG Spice Mixture
The most time-consuming part of making the sausages is gathering up and measuring the spices. So I decided to make a BIG batch of just the spices. In the recipe above I substituted 1/4 cup for each 1/2 teaspoon and 1/2 cup for each teaspoon.
My plan was to just shake and tumble the spices to mix them up inside the jar. But there were a few clumps, so I ended up pouring the mixture into a 4-cup measuring cup and mixing it up really well before putting it back into the large-mouth Mason jar.
Use 3 tablespoons of the mix for 2 lbs of turkey.
