Spaghetti Squash Snacks

 

Here are some recipes for spaghetti squash snacks. To cook the spaghetti squash, see my Spaghetti Squash blog.  The procedure is the same for each recipe, only the ingredients change.  Simply add all the ingredients into a glass bowl and allow spices/herbs to blend for about 10 minutes.  Then add the noodles and marinate for another 10 minutes.  Place on dehydrator sheets, using 2 cups per sheet for a lacy look, or 3 cups per sheet for more of a potato chip consistency.  If you are using raw spaghetti squash, it will take a couple of days to dehydrate on the raw setting, but only a day on the vegetable setting.

Try dehydrating some of the squash without any seasonings, it’s really nice just plain.  Sometimes people, and especially kids, prefer a less complex taste. It is naturally sweet!

Italian

  • 3 cups spaghetti squash noodles
  • 2 tbsp organic olive oil
  • 1 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp crushed rosemary
  • 2 large crushed garlic cloves
  • salt to taste

Cayenne

  • 3 cups spaghetti squash noodles
  • 1 tbsp macadamia nut oil (or other mild tasting oil)
  • 1/4 tsp cayenne
  • 1 lime juiced
  • salt

Cinnamon

  • 3 cups spaghetti squash noodles
  • 1 tbsp melted butter
  • 1 tsp cinnamon
  • 1/2 tsp molasses
  • salt
