Coconut Water Kefir

Recipe
- 3 cups coconut water
- 1 tbsp kefir SCOBYs
Fill a pot with hot tap water. Pour coconut water into a glass jar and place it in the pot of hot tap water. This idea is to make the water the same temperature as the SCOBYs. We don’t want to temperature-shock the SCOBYs with coconut water that is too hot or too cold. While the coconut water is getting warmed up, rinse off your milk kefir SCOBYs with non-chlorinated water. (Chlorine kills bacteria. We’re trying to encourage certain beneficial bacteria in the kefir.) Stir in the washed SCOBYs, put a lid on the jar, set it out on your counter or in your cupboard, then put a towel over it to keep it dark. Your drink will be ready in 2 days. Strain out the SCOBYs and place your freshly made kefir in the refrigerator.

October 21, 2012 at 6:50 pm If your pine nuts (and other foods too) don't say where they are from, they are probably from China. The USDA Organic sticker does not mean the food is from the US. I'm fine with buying inexpensive items from China, but I draw the line at food. I want to know and support my local farmers. Food is far too important.
